Ingredients

2–2.5 lb chicken breast
1 can artichoke hearts, rinsed & chopped
2 cups spinach (fresh or frozen, thawed & squeezed dry)
3–4 cloves garlic
1–2 tbsp lemon juice
½ cup chicken broth (optional)
Salt, pepper, garlic powder, onion powder, oregano
Directions
Add chicken, garlic, lemon juice, and spices to the crockpot
Cook LOW 4–5 hrs or HIGH 2.5–3 hrs
Shred chicken once cooked
Let sit uncovered 5–10 minutes to reduce liquid
Stir in spinach and artichokes, cover, cook 10–15 min on low
Optional: add olive oil or light/FF cream cheese if macros allow
