Football season calls for good food, and these deserve a spot in the starting lineup.
Coach Kiki’s Sack Em’ Sausage Balls put a higher-protein spin on the classic party snack. Instead of traditional sausage, we’re using lean ground chicken breast or turkey, mixing in plenty of cheddar, and bringing it all together with Kodiak Cakes mix and a sweet-and-savory blend of seasonings.
They’re cheesy, packed with flavor, easy to make, and ready in about 20 minutes. Make them for game day, meal prep, or whenever you need a quick protein-packed snack.
Fair warning: you’re gonna need a bigger batch!!
What You’ll Need
1 lb. ground chicken breast OR 99% lean ground turkey
6 oz. fat-free or reduced-fat cheddar cheese
~1 cup Kodiak Cakes Buttermilk Mix
1–2 tbsp. granulated sugar substitute, such as Stevia
1–2 tbsp. brown sugar substitute, such as Brown Sugar Stevia
½ tbsp. baking powder
1–2 tsp. black pepper
1 tsp. salt
1 tsp. paprika — smoked, hot, or sweet
½ tsp. crushed red pepper, optional
½ tsp. sage
½ tsp. allspice
How to Make ’Em
1. Preheat the oven.
Set your oven to 350°F and get a baking sheet ready.
2. Mix the seasonings.
Combine your sugar substitutes, baking powder, black pepper, salt, paprika, crushed red pepper, sage, and allspice.
3. Add the protein and cheese.
Add your ground chicken or turkey and cheddar cheese to the seasoning mixture. Mix everything together until combined.
4. Add the Kodiak Cakes mix.
Add the Kodiak Cakes mix ¼ cup at a time, mixing as you go. Stop once the mixture holds together well enough to form into balls.
Coach Kiki Tip: Don’t go crazy with the Kodiak mix. Too much will make your balls tough—and nobody wants that.
5. Roll ’em up.
Use your hands or a scoop to form the mixture into balls. Place them evenly on your baking sheet.
6. Bake.
Bake for approximately 20 minutes, or until the sausage balls are fully cooked through.
7. Enjoy!
Serve them hot and get ’em on the table before kickoff.
These work great as a game-day snack, an easy meal-prep option, or something to keep in the fridge when you want a quick protein hit.
Just don’t count on leftovers!!!
