INGREDIENTS:
1 Slice Center Cut Bacon
¼ cup chopped Onions
1 minced Garlic Clove
¼ cup Cornmeal
¼ cup Cassava Flour (AP flour works ok too)
1 tbsp Baking Stevia
⅛ tsp Salt
½ tsp Baking Powder
1 large Egg Yolk
¼ cup 0% Plain Greek Yogurt
¼ cup Unsweetened Almond Milk
2 tbsp Light Butter (I can’t believe it’s not butter) melted
1 cup Corn Kernes (frozen and thawed OR canned)
DIRECTIONS
Pre-heat oven to 350 degrees.
Fry the bacon until crisp in a skillet over medium heat - remove and then crumble
Add the onions to the pan and cook until translucent (about 2 minutes)
Add the garlic and cook for 30 sec. Remove pan from heat and set aside
In a medium bowl, combine the cornmeal, flour, stevia, baking powder and salt
In a separate bowl, whisk the egg yolk, yogurt, milk and melted butter together
Stir in the corn, crumbled bacon, onion & garlic
Add the dry ingredients and stir until combined
Pour the batter into a small greased baking dish
Bake for 30 minutes
