This is one of my go-to meal prep recipes that I make every week! These egg white bites are super simple to make, easy to grab on the go, and you can make them with a wide variety of vegetables and seasonings to keep them interesting! I used silicone baking cups from amazon for these fun shapes but you can also just use a muffin tin!

INGREDIENTS:
Liquid Egg Whites (carton or from whole eggs)
Bag of Frozen Spinach (or other veggies)
Cooking Spray
Any spices/seasonings, your choice!
Preheat oven to 37 degrees
Spray muffin tin or silicone molds with cooking spray
Spoon/stuff your spinach (thawed) into each tin (I used about 2tbsp spinach per bite)
Pour 1-2 egg whites (1 egg white = 1 ounce) over the vegetables
Bake for 20 minutes or until set
Eat right away or put in meal prep containers for the week!
