Spinach Egg White Bites Meal Prep

This is one of my go-to meal prep recipes that I make every week! These egg white bites are super simple to make, easy to grab on the go, and you can make them with a wide variety of vegetables and seasonings to keep them interesting! I used silicone baking cups from amazon for these fun shapes but you can also just use a muffin tin!


INGREDIENTS:

  • Liquid Egg Whites (carton or from whole eggs)

  • Bag of Frozen Spinach (or other veggies)

  • Cooking Spray

  • Any spices/seasonings, your choice!

  1. Preheat oven to 37 degrees

  2. Spray muffin tin or silicone molds with cooking spray

  3. Spoon/stuff your spinach (thawed) into each tin (I used about 2tbsp spinach per bite)

  4. Pour 1-2 egg whites (1 egg white = 1 ounce) over the vegetables

  5. Bake for 20 minutes or until set

  6. Eat right away or put in meal prep containers for the week!

MACROS for 1 egg bite (using 2 ounces Spinach and 1 ounce Egg whites) ~ 30 Calories | 0g Fat | 2.5g Carbs | 5g Protein


I eat my egg white bites every morning with my cream of rice!
