Turkey Breast Meatloaf Meal Prep

For some reason I'm obsessed with meatloaf. It's always something I crave, weird I know but it always hits the spot for me and is a comfort dish I love to meal prep. While this one may not be wrapped in bacon like my favorite from The Bear's Den (one of my favorite restaurants in my hometown), it is easy to prepare and has bomb macros!


MEATLOAF INGREDIENTS:

  • 1lb 99% Ground Turkey Breast (can also grind raw chicken breast in a food processor too!)

  • 1/3 Cup Quick Oats

  • 1 Egg

  • 1/3 Cup Chopped Onion

  • 2 Tbsp Reduced Sugar Ketchup

  • 1 Tbsp Worcestersire Sauce

  • 1/2 tsp: paprika, garlic powder, onion powder, black pepper, and parsley

TOPPING:

4 Tbsp Reduced Sugar Ketchup

1-2 Tbsp Mustard (depending on taste buds)

1tsp brown sugar (optional)


  1. Preheat oven to 425 degrees

  2. Spray loaf pan and set aside

  3. Combine all ingredients for the meatloaf together in a bowl

  4. Spread mixture evenly into prepared baking pan

  5. Bake for 15 minutes

  6. Brush the combined sauce on top then return for an additional 15 minutes.

  7. Remove from oven and let sit for 5-10 minutes

  8. Slice and serve or put in meal prep containers for the week!

MACROS for 1 serving out of 6! ~ 121 Calories | 1.5g Fat | 4.8g Carbs | 19g Protein


I served it here with rice and green beans but you could also serve it on a slice of wheat bread for an open faced sandwich, with mashed potatoes OR mashed cauliflower if you are trying to watch your carbohydrate intake (PSA: carbs are not bad for you)
